Monday blues!

Had a very busy weekend...with my classes and my hubby's social do...actually didn't have a time to breath...let alone post an update on the blog.anyways woke up this morning and peeped outside...it was totally cloudy and dull...but since poor hubby dear had to go to office...I had to cook something which is easy and my fussy sweetheart can enjoy...hence my go to meal -MOONG DAL and PUDINA ALOO.

MOONG DAL
1/2 cup moong dal
1/2 tsp turmeric
pinch of asefotida
Ginger juliennes
2 tomatoes
Fresh cilantro chopped
2 green chillies chopped
1 tsp cummin seeds
1 tbs ghee or vegetable oil (as per taste)
Salt to taste

Method:
In a pan or a pressure cooker put washed moong dal,water,turmeric,salt,ginger,green chillies and put it to cook.If using a regular pot cover it with a lid and cook for about half -an-hour or till done and if using a pressure cooker 2 whistles are sufficient.Once the dal is cooked prepare tempering by adding the oil or ghee to a hot pan.Once the oil becomes hot add asefotida and follow it with cummin seeds.Add the cooked dal and put it to boil.Once that happens add the cilantro leaves and voila! a very easy,tasty and healthy dal is ready.

PUDINA ALOO
4-5 boiled potatoes (peeled and chopped into cubes)
Pudina or mint leaves (fistful)
2-3 cloves of garlic
2 green chillies
1 tsp coriander powder
1 tsp cummin powder
1 tsp garam masala powder
1/2 tsp turmeric powder
1/2 tsp cummin seeds
1 tbs oil (of your choice)
1/2 a lemon
Salt to taste

Method:
Put oil to a hot pan and add the cummin seeds.To the tempering add chopped potatoes.Fry it for sometime and add the dry spices-turmeric,coriander,cummin and garam masala powder.Fry them together for sometime till the raw smell of masala leaves.In advance grind together the mint leaves,garlic and the green chillies.Once the potatoes look done add the mint paste and fry till all the ingredients come together.Add salt to taste.After switching off the gas,add lemon juice and mix it.enjoy this chatpata aloo.
